David Sarajishvili 

Was born in Tbillisi on octomber 28, 1848


David`s Father – Zaqaria Sarajishvili

David`s Mother – Elizabeth Savaneli

He studied at Tbilisi Classical Gymnasium #1 and then at the university in St. Petersburg. Later he pursued his studies in Germany – First in Munich and then at the university of Heidelberg which he graduated from in 1871 as Master of Philosophy and Doctor of Chemistry. Between the years of 1872-1877, David studied agriculture in Germany. In 1878-1880 he travelled to France to explore and learn winemaking.

In 1880  he married Catherine Poraqishvili . Sarajishvili Family didn’t have a direct heir. But it was not a tragedy for Sarajishvili, because he thought that every child brought up with a patriotic spirit and ready to serve the country for its better future could be considered as his own child.

Industrial Activities

In 1884 he founded the first brandy distillery in Tbilisi. Soon the Sarajishvili Company comprised 5 alcohol rectification:

·        1 Vodka
·        1 Liquor
·        7 Brandy Distilleries
As well as numerous Warehouses in Tbilisi, Moscow, St. Petersburg and many other cities. David is considered To be the founder of wine-brandy Production using classical technology not only in Georgia but throughout the then Russian Empire.
In the 90s of the 19-th century the Sarajishvili Company was producing nearly 50 types of alcoholic drinks.

Ø Vodka
Ø Cognac
Ø Rum
Ø Champagne
Ø Grand Champagne

In 1913 the Sarajishvili Company was honored with the status of the official supplier to the Emperor`s Court.
well. I think it will be quite interesting to say some words about the production of cognac, because  wine brandy production is a sort of an art.
Compared with Georgia wine history accounting tens of thousand years, Georgian wine brandy was born a bit later in the 19-th century.
The drink gets maturity and develops in an oak barrel and finally gets completed in a bottle.
Process takes minimum 3 years and maximum centuries of times.
Wine brandy is a strong alcohol drink produced out of white wine.
1 litre of cognac is produced out of 9 litres of wine.
It needs double distillation, second time distillation is called bonne chaffe.
The process lasts for 12 hours.
The next step is aging in oak barrels.

Today the production of cognac is continued by Join-stock companyDavid Sarajishvili and Eniseli .

THE BOTTLES ARE PTODUCED IN FRANCE . THE PRICE OF THE BOTTLE IS NEARLY 400 EUROS AND AS FOR THE DRINK ITSELF IT COSTS 2500 EUROS. EACH BOTTLE IS numbered and is impossible to be falsified..As for cognac ‘Eniseli’it was produced by Vakhtang Tsitsishvili who used to be the main technologist of the Sarajishvili company.The limited edition ( 200 bottles ) of sarajishvili 155 was dedicated to the 155-th anniversary of Sarajishvili. As for XX century only 300 bottles were made.
The Sarajishvili brandy was awarded with
109 Gold
 44 Silver
And 11 Bronze medals

            SARAJISHVILI house, which is also called ‘SARAJISHVILI NUMBER OR EUROPE’, CURRENTLY REPRESENTS the  WRITERS’ HOUSE. It is a well-known fact that the prominent writers and public figure such as... used to gather there and hold literary evenings.and they were discussing important political problems. So the house served like  a parliament.
There are some interesting facts about Sarajishvili.
King’s army soldier was killed during the riots in Guria. The king issued the order to destroy Guria.Ilia Chavchavadze  , who often visited David Sarajishvili asked him to appeal to the viceroy Golitsini with the request to stop the army which had  already been situated near Kutaisi . Golitsini owed a lot of money to Sarajishvili and David asked him in return of this debt to retreat the troops . Now I will switch on a footage which shows us  the above mentioned  historical fact .
David Sarajishvili spent vast amounts of money on restoration and reconstruction of oldest Georgian monuments. He saved from loss a lot of Georgia’s religious and material treasures.
Sarajishvili’s  name is  connected to the construction of  Kashueti church. He paid a of money to the famous Italian architect and asked him to follow the traditions of Georgian  architecture. The architect, with the advice of Sarajishvili  visited Samtavisi church . The wonderful sight became a source of inspiration for building Kashveti. We have got another  video which depicts this event.
Sarajishvili was not only an industrialist but a philanthropist as  well.
David’s fellows were...... They held Sarajishvili’s   fellowship which enabled some of them to continue their studies abroad. David has played significant role and hugely contributed to establishment and development of various national and public institutions such were historical and drama societies, Tbilisi State University, musical schools, Georgian literacy promotion society etc
The biggest part of his possessions and property was transferred  to the country’s ownership according to his last will.
